RED WINES

The altitude of the vineyards varies from 600 to 1000 meters above sea level. The extreme weather conditions and drastic diurnal shifts (an average of 16°C between day and night) result in wines of great phenolic profile, complexity and longevity. In the vineyards we use only a Bordeaux mixture (copper sulphate), and all fermentations are spontaneous, using only indigenous yeast colonies. The wines are neither fined nor filtered. When possible, we avoid the addition of sulphites, but in rare cases we allow ourselves to add a maximum of 30mg/lt. 

 

WHITE, SPARKLING, ROSE

White vines harvest starts early and often we find ourselves searching for white grapes hidden among red grapes in the vineyards. While the Kaos Etna Bianco is macerated for as little as 6 hours with only Carricante and Catarratto Grapes, the Kaos 5.0 goes through a 5 days maceration and all the remainder grapes are to be found in it, Carricante Catarratto Minnella Inzolia Grecanico and Malvasia among others
